Summertime Grilled Peaches
The perfect summertime dessert.

I was skeptical to try grilled peaches. I just thought they were kinda… boring. Like… it’s just peaches? Grilled? With some ice cream and shit on top? It kinda sounds like a lame, healthy, weight-conscious-type dessert. I’m bored!
But man oh man there is nothing boring about this. Sure, it’s simple, but sometimes you don’t need to complicate things. I’m reminded just how delicious and sweet good fruit can be. This recipe is simple, it’s delicious, it’s incredibly easy and perfectly light for a summer evening. Give it a try!
Ingredients
For the grilled peaches:
2 ripe peaches, halved (*1)
2 Tbsp butter, melted (*2)
4 Tbsp brown sugar
For the toppings (optional):
Caramel Ice cream
Salted caramel
Basil, for garnish
Directions
Grill the peaches:
Preheat your grill. I used an indoor, tabletop grill on high heat.
Dab off excess moisture from the face of each peach half with a paper towel.
Evenly lather the face of each peach half with melted butter.
Coat the face of each peach half with about 1 Tbsp of brown sugar. You can use more or less brown sugar depending on the size of your peaches.
Place each peach, face down, into the hot grill. Cook for 1 minute, uncovered.
Keep each peach face down, and rotate 45 degrees to create criss cross grill lines. Cook for 1 minute, uncovered.
Turn over each peach on its back side and turn the grill down to low. Cover the grill and cook for 1 more minute. The peaches will be caramelized and soft.
Remove the peaches from the grill.
Garnish the peaches (optional):
While they’re still warm, top each peach with a scoop of ice cream (I used caramel ice cream, but plain ‘ol vanilla would be delicious, too) and a drizzle of salted caramel. Garnish with basil. (*3)

NOTES:
Make sure the peaches are slightly squishy - kinda like feeling for a ripe avocado.
You can make this recipe vegan by replacing the butter with a vegetable oil and topping with vegan ingredients!
You could also add roasted nuts, granola, whipped cream… have fun with the toppings! If you don’t have any good toppings on hand, you could even enjoy them on their own - the peaches are sweet enough as is!
